well.. fruggies is fruits and vegggies.. LOL. Basically you can use any kind of fruits and vegetables you like, it’s the dressing that counts. It’s healthy, it’s light and fresh, and yet still very delicious. Perfect for those on a diet.

servings : 2

Ingredients :

  • 1 apple
  • 1 pear
  • lettuce
  • 1/2 avocado
  • cherry tomatoes
  • 1 egg
  • olive oil
  • honey
  • lemon juice
  • 1 garlic clove

Directions :

  1. diced the fruits to bite size, shredded the lettuce, cut in half the tomatoes.
  2. boiled the egg to hard-soft boiled, for approximately 7 minutes in a boiling water. Let cool in a cold water bath before peeling the shell.
  3. arrange the veggies & fruits on a bowl, cut the egg in 4 ways.Drizzle with the dressing.

the dressing :

finely chopped the garlic, put in bowl. Add 4 tbsp of olive oil, 2 tbsp of honey, 2 tbsp of lemon juice, pinch of salt and pepper. Mix all the ingredients and pour over the salad.

I usually add 2 tbsp of balsamico to the mix also, but I ran out of it. You can experiment with other ingredients, like apple cider vinegar, dijon mustard, etc. Make the dressing yours, so eating a bowl of salad won’t be a burden.
