ENCHILADAS CASSEROLE

I have a tough time deciding the name for this recipe. I kinda like the name Mexican Lasagna also, cause the process of making this is very similar to a lasagna. But Enchiladas Casserole has a nicer ring to it 🙂

I made this today and served it to my friends, and they all loved it! This may not be as simple as my other recipes, but with step by step pictures I’m sure you can all manage to make this from scratch.

HOMEMADE FLOUR TORTILLAS

At Thursday, me & my friends are having a Mexican themed party. I’m planning to make Enchiladas Casserole. In order to do that, I need tortillas. Here in Indonesia, they’re a bit pricey and hard to find, that’s why I decided to make them from scratch. I found the recipe online here,  but I made one small alteration. I use 3 tablespoons of margarine, instead of 2 tablespoons lard. And though from the recipe’s reviews lots of them said that they’re pliable, mine are not. Maybe I made them too thick, but I like it a lot!

Ingredients

  1. 4 cups all-purpose flour
  2. 1 teaspoon salt
  3. 2 teaspoons baking powder
  4. 3 tablespoons margarine
  5. 1 1/2 cups water
