I always love a good pancake, not just for breakfast. The road to find a perfect recipe was hard, but I think I have found the one.
Until I found another recipe, this one is my favourite.
edited : I made a few changes and it turns out even better.
- 200 ml buttermilk
- 1cup flour
- 2 tbsp castor sugar
- 1 egg
- 2 tsp baking powder
- 2 tbsp melted butter
- 1/2 tsp salt
(buttermilk substitute : 200 ml milk + 1,5 tbsp of vinegar/lime juice, stir until it forms lumps, like a yoghurt)
- mix all the dry ingredients, add the buttermilk gradually.
- add the eggs and melted butter, beat until well incorporated. if it’s too thick, add more milk. if it’s too thin, add 1-2 tbsp of flour.
- pour the batter onto pan, about 1/4 cup, brown on both sides. serves hot with butter and maple syrup.
it took me half an hour to make all 15 pancakes, but it took me only 5 minutes to devour the 1st plate.. hehehe.. delicious!
