CLASSIC PANCAKE

I always love a good pancake, not just for breakfast. The road to find a perfect recipe was hard, but I think I have found the one. Until I found another recipe, this one is my favourite.

servings : 10 medium (aprox. 12cm width) pancakes

Ingredients :

  • 200 ml buttermilk
  • 1cup flour
  • 2 tbsp castor sugar
  • 1 egg
  • 2 tsp baking powder
  • 2 tbsp melted butter
  • 1/2 tsp salt

(buttermilk substitute : 200 ml milk + 1,5 tbsp of vinegar/lime juice, stir until it forms lumps, like a yoghurt)

directions :

  1. mix all the dry ingredients, add the buttermilk gradually.
  2. add the eggs  and melted butter, beat until well incorporated. if it’s too thick, add more milk. if it’s too thin, add 1-2 tbsp of flour.
  3. pour the batter onto pan, about 1/4 cup, brown on both sides. serves hot with butter and maple syrup.

it took me half an hour to make all 15 pancakes, but it took me only 5 minutes to devour the 1st plate.. hehehe.. delicious!
