In the last few weeks I came across some wonderful blogs that presented gorgeous decorated cookies. Like this one by sweetsugarbelle. OMG! Amazing! I fell in love. I bought cookie cutters whenever I found them. I collected recipes for the cookies & the royal icing. But with my schedule of mostly baking lasagnas & apple pies almost everyday (not that I’m complaining, that’s where most of my income from), I couldn’t find the time to cook/bake anything else.
Yesterday I saw a lovely picture of my cousin’s cupcakes, which is a tie dye vanilla cupcakes. Being me, I wanted to try as well. I looked up at my cabinet and saw blue, pink, yellow, and purple food coloring. Yay!
Now, as much as I love a good vanilla cake, I wanted to try something different. Again, I raided my cabinet and found a lemon essence. Why not make a lemon vanilla cake? It’s psychedelically good!!
So today is my best friend birthday, and I wanted to make something special for her. I decided to bake a double chocolate cupcake with vanilla bean buttercream frosting.
For the cake, I used a slightly different recipe from this one.
I reduced the Cocoa Powder and add some chocolate chips. This time i half cheated on the buttercream. I use a buttercream mix and whisk it with fresh vanilla pods. Don’t you just love the tiny black dots?
