STRAWBERRY LEMONADE CAKE with WHITE CHOCOLATE FROSTING

So it’s a day after Christmas. I’m still very tired from all the cooking & baking for my customers on christmas week. Dozens of cupcakes, apple pie, lasagna, chocolate tart, muffins, panettones, came out from my kitchen. And what did I get myself into just this morning? Another baking, this time to indulge myself… *sigh* couldn’t stay away from it I guess, I just love it too much.

I roamed my cabinet and found a vanilla cake mix and a box of white chocolate Jello. I almost forgot they exist! Not in the mood to weigh ingredients, I opted to use the quick and easy way, the instant way. But knowing myself, I needed to add some twist. I still have some fresh strawberries & lemons, so decision decision.. What to bake? After some thoughts, I came up with a Strawberry Lemon Cake covered with Lemony White Chocolate Jello as its frosting. Yumm!Don’t think I need to put the ingredients & directions, right? I just did whatever the boxes told me to. But in case you don’t have an instant cake mix and Jello, I’m gonna link you with a vanilla sponge cake recipe and vanilla custard recipe or lemon curd recipe , but still untested by me, so any failed attempt, not my doing!!

With the cake mix I added the juice from 2/3 lemon and zest. With Jello mix, I added the rest of 1/3 lemon juice and zest. I sliced thinly the strawberries, and spread it with the custard between the cake after it cooled down. Lastly, I covered the cake with the rest of the custard. Yumm!!

Sooo.. Here’s the end result! So rustic & retro like, right?? It’s too sweet for my liking, because you probably all know that anything US made is just overly sweet (the Betty Crocker’s french vanilla cake mix & the White Chocolate Jello, sooo sweet!). Maybe next time I’m gonna make my own vanilla cake & custard. When I’m not tired anymore. Tomorrow? Hahaha.. Maybe ๐Ÿ™‚
